Raita

2 cups yogurt
1 small cucumber (finely chopped)
2-3 green chillies (finely chopped)1 small onion (finely chopped)
2 sprigs of cilantro (finely chopped)
1/2 tsp salt
1/2 tsp ground black pepper
1 tsp sugar2 tbsp fresh lemon juice.

Mix all ingredients into yogurtChill before serving.

Let it stand for a few hours before you want to use it as it allows for the flavours to merge.
These two recipes combined go awesome with tandoori chicken or just grilled chicken. It has a nice bite to it. It goes will with the sweet potatoes and the rice. For a nice veggie meal, the chickpea salad would go well with the sweet potatoes and raita/chutney and rice.

Apple Cake with Rum Sauce

Cake

* 1 Pkg Yellow (Golden) cake mix with pudding in the mix. Make up according to directions on the box.

* Peel 3 Granny Smith apples and chop up coarsely but not fine pieces.

* Gently mix apples into batter. Pour into a greased or sprayed pan.

* Bake at 350 for 50 min.

Rum Sauce

* 1/4 lb butter
* 1/4 cup water
* 1 cup sugar
* 1/2 cup rum (amber)

* Melt butter and stir in water and sugar. Boil for 5 min - NO LONGER - keep stirring! Remove from heat and then pour in rum all at once and keep stirring!!

* Pour glaze over the cake OR you can serve it on the side after you serve up a slice then pour glaze overtop and then top with whipped cream.

Chimichurri Sauce

You can mince the ingredients by hand or use a food processor, which is faster and easier.

There are many variations on this condiment, and it is served with everything from empanadas to grilled steak. I've used it with steak and had it served with grilled Chilean Sea Bass, both uses were amazing.

* 1/2 cup olive oil
* 2 tablespoons fresh lemon juice
* 1/3 cup minced fresh parsley
* 1 clove garlic2 minced shallots
* 1 teaspoon minced basil, thyme or oregano, or mixture
* Salt and pepper to taste

1. Combine all ingredients and let set for at least 2 hours before serving.
