Chocolate Fudge (aka Christmas fudge)

These are crazy long instructions for something that is so easy to make...and well worth the read.

3 c chocolate chips
4 Tbs. butter
1 can sweetened condensed milk

Note that one pound of chocolate chips is the same as three cups of chocolate chips - not two.

Throw the butter and chocolate chips into a medium metal bowl or double boiler. Pour the sweetened condensed milk on top.

Fill a small pot with about an inch of water and bring it to a boil. Once it begins to boil, reduce the heat so the water is barely simmering.

Place the metal bowl on top of the pot to make a bain-marie. (If you have a double boiler, by all means, use it instead.) Make sure the bottom of the bowl is suspended above the water level itself.

Line a pan with two sheets of wax paper, one going one way and one the other. One on top of the other, this way you can pull out the fudge when it's fully cooled. Add a little lick of butter to the bottom of the first sheet to keep it from shifting.

Let the fudge cool a little in the pan and then transfer to the freezer. Before you try to cut it, let it warm ever so slightly or you will have very chocolately hands...which is never a bad thing.

The most dangerous cake recipe...try it if you dare!

I got this from my mom. She handed it to me and gave me a warning, 'You must try this but you will never be able to put it down.' Apparently, its quite addicting...

5 Minute Chocolate Mug Cake

4 tbsp flour
4 tbsp sugar
2 tbsp cocoa
1 egg
3 tbsp milk
3 tbsp oil
3 tbsp chocolate chips (optional)
a small splash of vanilla extract
1 lg coffee mug

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and again mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again (yes. its a lot of mixing)

Put mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug but don't be alarmed!
Allow to cool a little and tip out onto a plate if desired or eat it out of the mug (save a dish!)

EAT! (this can serve 2 if you are feeling generous) and why is it the most dangerous cake? Because it only takes 5 minutes to bake another one...or so I'm told...I haven't dared try it yet.
