Pumpkin Nut Cookies

¼ c shortening
½ c sugar
1 egg, beaten
½ c pumpkin
1 c sifted flour (all purpose)
2 tsp baking powder
½ tsp salt
1 ¼ cinnamon
¼ tsp nutmeg
1/8 tsp ginger
½ c raisins
½ c chopped nuts

Cream shortening; add sugar gradually.
Cream until light and fluffy.
Add egg and pumpkin, mix well.
Sift flour, baking powder, salt and spices together and mix well until blended.
Add raisins and nuts.
Drop by teaspoon fulls on greased cookie sheet.
Bake in 350 degree oven for approx. 15 minutes. (24 cookies)

Suzanne's "The best chocolate chip cookies ever"

When we got married, we wanted to have a little treat in each of our out of town guests rooms. My friend Suzy came up with the idea of baking cookies. Suzanne spent a whole day in my kitchen baking countless dozens of cookies while I tagged and bagged them.

They are still talked about by some of our guests! A can't miss recipe.

Cream together in a mixing bowl:
1 cup shortening
1 cup brown sugar
½ cup white sugar
2 eggs
1 tsp vanilla

Then add and mix thoroughly:
2 cups flour
1tsp baking powder
½ tsp salt
2 cups chocolate chips (I like to do one cup of white chocolate and one cup of butterscotch or skor/heath chips)
1 cup chopped walnuts (optional)

Spoon dollops of mixture onto cookie sheets and bake at 375 degrees for 8-10 minutes. Let cool before removing from cookie sheet.

Dad's Favourite Cookies

N.B. Crisco is a Cdn thing. Just use butter.

1 c soft butter or Crisco
3 c brown sugar (lightly packed)
2 eggs
1 tsp vanilla
2 c sifted all purpose flour
1 tsp baking powder
1/2 tsp soda
1/2 tsp or less salt
1 c flaked coconut
2 c quick cooking rolled oats

Heat oven to 375F
Grease cookie sheets or spray with Pam
Beat butter, brown sugar, eggs and vanilla together until fluffy.
Sift in flour, baking powder, soda and salt together.
Stir in coconut and rolled oats

Shape into balls, place on cookie sheet and flatten with a fork dipped in cold water.
Bake 10 minutes or until nicely browned and set.
Cool until firm, lift off sheets and finish cooling on racks.

Rice Krispies Date Dainties

1 c sugar
1 c finely cut dates
2 eggs
3 c rice krispies
1 tsp vanilla

Combine sugar, dates and eggs in a cold fry.
Cook about 10 minutes over medium heat, stirring constantly.
Remove from heat and sitr in vanilla and rice krispies.
Dip tsp in cold water cold water, then drop mixture by tsp full on waxed paper to cool.

Rickety Uncles

These are yummy. A warning, don't freeze them. If you do freeze them and then try to eat them unthawed, you will be putting your dentist's kids through university with the amount of dental work you need after trying to eat a frozen one. You have been warned.

1/2 c sugar
1 c corn syrup

Bring to a boil the two above ingredients.

Add to the pot of boiling contents above - 1 c of peanut butter, 1/2 tsp vanilla and 4 c of corn flakes. Mix well.

Drop by tsp full onto wax paper until cool.
Store in covered container in refrigerator.

Scotch Cookies

1 cup butter
3 tbsp icing sugar
2 cup flour

Directions:

Mix a little of each ingredient at a time until all is mixed well together
Roll between two sheets of waxed paper
Cut into fancy shapes
Bake on ungreased cookie sheet at 300 degrees for 20-25 minutes or until edges are very lightly browned.

Candy Cookies or Snowballs

Gram called these Candy cookies, Mom calls them snowballs but me, I just call them yummy! Its always a staple at Christmas time at Mom's.

3 tbsp butter
¾ c brown sugar
1 ½ c dates, cut finely
1 cup coconut
½ cup walnuts (optional)
2 cup rice puffs (i.e. Rice Krispies)
1 tsp vanilla

Directions:

Cook the butter, sugar and dates over low heat until mushy
Remove from heat and stir in coconut, walnuts, vanilla and rice puffs
Shape in balls and rolls in icing sugar

Potato chip cookies

Yes, Virginia, there really is a cookie made with potato chips!

1 lb margarine
1 cup white sugar
3 tbsp vanilla
3 ½ cup flour
1 cup crushed potato chips

Directions:

Cream together margarine and sugar
Add vanilla, flour and crushed chips
Roll into balls, flatten with a fork dipped in cold water
Bake on an ungreased cookie sheet at 350 degrees for 10-12 minutes

Note: If dough is too soft to handle, chill for several hours.

Shortbread cookies

½ cup cornstarch
½ icing sugar
1 cup flour
¾ cup butter (at room temperature)

Directions:

Sift cornstarch, sugar and flour together.
Blend in butter with a spoon until a soft dough is formed
Shape into 1” balls.
Place about 1 ½” apart on a greased cookie sheet.
Flatten with a slightly floured fork
Bake at 300 degrees for about 20-25 minutes or until edges are lightly browned.
Makes about 3 dozen cookies.

Note: If dough is too soft to handle, cover and let chill for about 1 hour.

Thimble Cookies

These are one of my all time favourite cookies, bar none. They are best just slightly frozen, in my opinion.

½ cup butter
¼ white sugar
1 egg, separated
1 tsp vanilla
1 cup sifted flour
Finely chopped nuts
Jelly

Directions:

Cream butter and add sugar gradually and mix well
Add well-beaten egg yolk, vanilla and flour. Mix well
Shape into balls and the size of a walnut.
Dip in unbeaten egg white, then into finely chopped nuts.
Dent in the center of ball with thimble (you can use the tip of your thumb)
Place on cookie sheet and bake for 5 minutes at 350 degrees and dent again.
Bake for another 15-20 minutes more
When fully cooked, fill with jelly of your favourite jelly while still warm.

Chocolate chip cookies

Because you can never have enough recipes!

T's favourite treat - Oatmeal Bran Cookies!

2 c margarine
2/3 c brown sugar
1 1/3 c white sugar

Beat together well.

2 lg eggs

Beat eggs together until well whipped

4 c +/- white flour
4 c +/- oatmeal/bran/multigrain flakes
1 tsp salt
2 tsp baking powder
2 tsp baking soda

Mix in with above ingredients unti well blended.

Scoop onto cookie sheets and bake at 300 to 325 F for 15 min.
