Butter Cream Icing

Hands down the best icing I've ever had.

1/4 cup Margarine or Butter (beat it)
1 to 2 cups Sifting icing sugar then add to butter
1 tsp vanilla
1 tsp of milk
Mix initial recipe until stiff then add a tsp of milk then add more icing sugar then milk etc. until you get enough icing.

Queen Elizabeth Cake

* 1 c chopped dates
* 1 c boiling water
* ¼ c butter or margarine
* 1c brown sugar
* 2 beaten eggs
* 1 ½ c all purpose flour
* ¼ tsp each salt, cloves and nutmeg
* 1 tsp vanilla
* 1 tsp cinnamon
* 1 c chopped nuts
* 1 tsp baking powder
* 1 tsp baking soda

Topping:

* 3 tbsp butter
* 2 tbsp cream or milk
* ½ c brown sugar
* ½ c coconut

* Add dates to the boiling water and cook a few minutes to soften the dates, stirring often.
* Cream the butter or margarine, blend in sugar then beat in the eggs.
* Mix well.
* Sift together flour, baking powder, baking soda, salt and spices.
* Add to the egg mixture and stir in dates, vanilla and nuts.
* Mix well.
* Turn into greased 9 x 13 pan, spreading evenly.
* Bake at 350 degrees until top springs back when lightly touched (30-40 minutes)

* Shortly before the cake is done, combine topping ingredients in a saucepan.
* Bring to a boil over low heat, stirring constantly,
I Pour over cooked cake and return to the oven to brown.

Peanut Butter Cake

· 1/2 cup white sugar
· 1/2 cup brown sugar
· 1/2 cup corn syrup
· 1/2 tsp salt
· 1 tsp vanilla
· 3/4 cup peanut butter
· 2 cup corn flakes
· 1 cup Rice Krispies


1. Put all in double boiler and stir until sugars are dissolved.
2. Add in the peanut butter, Corn Flakes, and Rice Krispies.
3. Mix well.
4. Pack in greased cake pan and let cool.
5. Ice lightly if desired.

Icing

· 1 cup icing sugar
· 2 tsp instant coffee
· Butter to taste
Mix well and spread on cake.

Cream Cheese Icing

· 4 oz. cream cheese
· 2 tbsp butter
· 1 1/2 cup icing sugar
· 1 tsp vanilla
· Chopped walnuts (optional)

1. Beat cheese and butter until creamy. Blend in icing sugar and vanilla.
2. Beat until smooth.
3. Spread on cake. Sprinkle with nuts if desired.

Butterscotch Icing

· 3 tbsps butter
· 3 tbsps milk
· 1/2 cup dark brown sugar
· 1 2/3 cup sifted icing sugar
· 1/2 tsp vanilla

1. Combine butter, milk and brown sugar in a sauce pan.
2. Heat until sugar is dissolved.
3. Stir in icing sugar and vanilla; heat until creamy.
4. Spread over top and sides of cake.

Seven Minute Icing


· 1 egg white, unbeaten
· 1 scant cup of white sugar
· 1/8 tsp cream of tartar
· Few grains of salt
· 1/3 boiling water
· vanila to flavour


1. Place sugar, salt, cream of tartar and boiling water in top of double boiler, place over boiling water
2. Add unbeaten egg white, heat mixture with rotary egg beater, until thick and smooth.
3. Remove from heat and add flavouring.

To test 7-minute icing, cut with silver knife. Frosting should retain the clean cut. All boiled icings require longer cooking on damp, heavy days than on dry days.
