Shortbread cookies

½ cup cornstarch
½ icing sugar
1 cup flour
¾ cup butter (at room temperature)

Directions:

Sift cornstarch, sugar and flour together.
Blend in butter with a spoon until a soft dough is formed
Shape into 1” balls.
Place about 1 ½” apart on a greased cookie sheet.
Flatten with a slightly floured fork
Bake at 300 degrees for about 20-25 minutes or until edges are lightly browned.
Makes about 3 dozen cookies.

Note: If dough is too soft to handle, cover and let chill for about 1 hour.
