Karen’s Perogies

This is my Aunt Karen's recipe.

Dough:

Mix together (like a pie crust):

2 cup flour
1 tsp salt
2 tbsp cooking oil

Then add:

1 egg
½ cup of luke warm water (enough to make dough soft).

If softer dough desired, add:

½ cup mashed potatoes

Form dough into ball and let stand covered for 20 minutes. Roll out dough to 1/8-inch thickness and cut into circles.
Put 1 tbsp of filing mixture into each circle of dough and fold over and seal edges.
Place perogies into boiling water and boil for 5-7 minutes
After perogies have risen to the top, stir occasionally with a spatula to prevent sticking
Drain each perogie and place in casserole dish and pour melted butter and slightly fried chopped onions over them. Keep warm in oven and serve with sour cream

Possible other fillings:

Cheese potato
3 cup mashed potatoes
2tbsp finely diced, slightly fried onions
½ cheese whiz or grated cheddar cheese
Mix thoroughly.

Cottage cheese
2 cup cottage cheese
1 egg
Mix thoroughly.
