Fruit Cake (Wedding)

· 1 1/2 cup seedless raisins
· 1/2 cup currants
· 1 cup mixed fruit
· 1/2 cup red and green cherries
· 1/2 cup chopped dates
· 1/2 tsp ea. cloves, allspice, and cinnamon
· 1 1/4 cup all purpose flour
· 1/4 tsp soda
· 1/2 cup butter
· 1/4 cup molasses
· 1 cup brown sugar
· 3 eggs
· 1/2 cup fruit juice (pineapple, apple (cider) or orange juice)
· 1/2 wine glass of brandy
· 1/4 tsp salt

1. Prepare fruit and sprinkle with brandy. Let stand for several hours or overnight. Stir occasionally.
2. Grease and line fruit cake tin (8x8x4) with well greased brown paper.
3. Mix cake batter; beat until smooth.
4. Add fruit and mix well, and turn into greased and lined pan.
5. Bake in pre heated oven (225 degrees) until done; about 2 hours.
6. Place in shallow dish of water in bottom of oven to prevent drying of cake.

This is a basic recipe and can be adjusted to such one's taste.
